Hidden Coves - Uninhabited Islands


You can rent a snorkel gear and swim over to the nearby marine preserve just outside of Montego Bay, where you'll find a rainbow of tropical fish for your enjoyment.

Ocho Rios Jazz Festival

June is Ocho Rios Jazz Festival which is being held from June 9th through to June 16th.

This pure jazz festival features international performers from the Caribbean, the United States, and Europe along with renowned Jamaican jazz artistes.

Start making plans to visit with 2012 being our 50th Year of Independence, there are a lot of celebrations going on.

Jamaican Cuisine - Recipe Of The Month

Tropical Avocado Mango Salad

<>, as any Chef will tell you to make tasty salads start with the freshest ingredients.

Enjoy!!!


Ingredients





2 tablespoons lime juice2 teaspoons light brown sugar
1 teaspoon rice or white wine vinegar2 tablespoons fresh orange juice
1/4 teaspoon crushed red pepper flakes1/3 cup extra-virgin olive oil
Dash salt and pepper1 medium cucumber, cut and dice
1 avocado cut into dice1 mango, cut into dice
1/4 sweet onion, thinly sliced, optional3 cups arugula or bag of salad greens
Almonds (optional)

Preparation

Combined lime juice, brown sugar, vinegar, orange juice and crushed red pepper flakes in a large bow.

Slowly stream in the olive oil while whisking to form an emulsion. Season with salt and pepper.

Add cucumber, avocado, mango and onion, season and gently toss to coat.

Serve over a bed of arugula or salad greens.

Add almond if you like.

You can make changes to this salad by adding, chicken, shrimps and tomatoes.

Per serving: 313 calories, 22g carbohydrate, 0mg cholesterol, 26g fat, 3g protein, 11mg sodium.
